Are there any major differences in bison vs cattle meat? Should I count more protein in bison or are the blocks relatively similar? I've heard bison is more protein dense but I'm not sure if thats coming from truly informed sources or not.

http://www.nal.usda.gov/fnic/cgi-bi...h.pl?bison Seems to be about 7-8 grams per ounce.

Thanks, but I'm confused by the link you included. I'm not sure if I'm reading the items listed correctly. Under Game meat, bison, ground, raw - it has me select 100 grams and the value of 100 grams of edible portion for protein is 18.67. How did you figure the 7-8 grams? Also I tried going just to www.nal.usda.gov to find the search you used and I think I'm missing it, could you point me in the right direction so I can reference it in the future? Thank you! :)

I don't know your answer, but I do believe bison is quite lean, so you may want to add fat when you have it. I love bison, and am originally from a bison-ranching state. Mmmm! Yummy! Ronica

I agree Ronica, nothing compares to bison. And I can compensate by the lack of fat by stir frying my veggies in a bit of olive oil. I just moved and I'm excited we have a free range butcher shop close by that sells bison, free range cattle and chicken..and even ostrich! Now I'll have to try that sometime.

Here is the link to the USDA food database: http://www.nal.usda.gov/fnic/cgi-bi..._search.pl Also, i clicked the second selection for bison( http://www.nal.usda.gov/fnic/cgi-bi..._search.pl?bison ) titled: [b:2771a344c5]Game meat , bison, top sirloin, separable lean only, 1" steak, cooked, broiled[/b:2771a344c5]", and then i clicked 1 serving at 3oz. It said it yielded about 24 grams protein, which means about 8 grams protein per ounce. That is a little bit more than the normal 7 grams of protein per block, but really doesnt need to be counted. Treat it like Beef! It is pretty low in fat, about 4.5 grams (almost the same as chicken), so remember that means you add 1.5 gram fat blocks, not 3 gram fat blocks. Thanks

Ostrich, Zone4me? I've tried it. Taste like, um, chicken. But those drumsticks are rather unwieldy.

I eat it all the time and it looks and tastes almost identical to beef. Sue

I'd have to agree with Sue. I went to a gourmet meat store the other day and was told the same thing. I also saw the ostritch meat. Looks just like beef. I haven't tried it yet but hope to soon.

Hi, A few years ago Dr. Sears answered a question in "Ask Dr. Sears " that I had asked regarding the use of ostrich meat in the Zone. Essentially he said it was an excellent Zone protein, even better than chicken breast, because of the percentage of monounsaturated fat it contains. Sue

I had ostrich jerky once. I thought it tasted like ostrich. Please don't ask me to describe it. The jerky was not a 'hit', but I'm not a jerky fan anyway. Ronica
