If their is fat in my protein does that count towards fat blocks? 1 oz of Mozzarella lite has 8 grams protein and 4 grams of fat. Does the fat count toward my snack or do I still add 3 almonds?

If there is more than 1.5 grams of fat per block of protein, then you would subtract it from the 1.5 grams of fat that you would add. So, in your example, you would not add any extra fat, since you already have an excess of fat.
