I see on the on-line food list that there is mentioned the amount for cooked beets but is there a place that mentions raw beets and other raw vegetables, like corn on the cob? Can this information be found in a book or somewhere else on the web?

Raw corn and beets don't change in size significantly with cooking, so they would be about the same volume per block whether cooked or raw. They would be still be considered unfavorable when eaten raw.
