    hi,
    i recently started with the zone and, although i am not a vegeterian, i enjoy veggie meals and am not a big fan of meat and eggs. i've been preparing seitan for years and i consider it to be pure protein, but i'm now wondering how much of it do i count to be one block of protein, is it just 7 grames or...?
    how much seitan do you all take as one block P?

    Look it up in a food database and use the amount of seitan that yields 7 grams of protein.

    i've tried that and the result was that a block of seitan is 25 grams, i hope i got it right (turns out there are 28 grams in 100 grams of seitan, so...). now i checked it in the database and it seems ok!

    You're welcome. The packages of powdered gluten for making seitan usually have nutrition labeling. If you're making it from flour, I'd consider that the finished product contains about the same amount of protein that was in the amount of flour that you began with. When making it from flour, IMO most of what is washed away would be carbs.
