Cooking for a friend

    I have recently switched back to the zone.
    Next week I have a friend coming for lunch who is a vegan, and her children are all vegetairans. I will be making a soup that covers the carbs, but need to come up with a protein meal. I am not a vegetarian myself, but would like to stay in the zone and also not upset my friend by eating an animal product in front of her.
    Any ideas woudl be appreciated.

    Hello Sharon:

    There's alot of different things you can do to supplement for your protein... For example you can add protein powder to the meal you will be eating or cooking for yourself. I see your friend is a VEGAN so she keeps away from everything that comes from animals, So eggs and milk are out of the question...
    Now Tofu and Soy substitutes are also a great way to supplement for Protein and you wouldn't have to worry about hidden fats within the Soy as you would with meat...

    Thanks Yvette, I was really hoping for a nice protein recipe to go with the rest of the meal.

    Now one tehnical hitch is that we live in a very small country area, and when I went up to our local supermarket, they did not have any tofu. So that may not be an option after all.

    Do they have any type of soy substitutes? Soy is becoming a very famous food these days... they have soy hot dogs and hamburgers (Make sure you let your friend know these are derived from soy and not meat though if you choose this option...) but aside from that you can go for the protein powder in that case... :-S

    Oh by the way... I was looking at the vegetarian 7 day meal planner and I saw this recipe... all the other ones had either cheese or Tofu, there's cheese in this one but she might not notice it's in your meal, unless she wants to try it... ;-)

    Dinner: Vegetarian Chili

    Ingredients
    1 cup soy protein crumbles
    1 teaspoon olive oil
    Onions, garlic, pepper, and mushrooms, chopped to taste
    1 cup stewed tomatoes with liquid
    ¼ cup canned kidney beans, drained and rinsed
    Chili powder to taste
    1 ounce reduced fat cheese, shredded

    Instructions
    Sauté the crumbles in oil with the chopped onion, garlic, pepper and mushrooms. Add tomatoes, kidney beans and chili powder. Simmer for 10 minutes... Top with cheese.

    Thanks for that Yvette. That Chilli looks nice.
    Reading your post reminded me that I can get vegetarian cheese just down the road at the dutch cheese shop. So that might be a good way to go. So off the the cheese store tomorrow and go from there.
