Quick and Easy Tomato Bruschetta Sandwich
½ tomato, chopped
1 teaspoon extra virgin olive oil
Marjoram, to taste
Oregano, to taste
Basil, to taste
Onion powder, to taste
S&P, to taste
2 slices Zone white bread, toasted
Grated Parmesan, if desired
To make the bruschetta, mix together all the ingredients except for the bread and cheese.
Top one slice of toast with the bruschetta mixture, sprinkle with the Parmesan if desired, and top with the other slice of toast.
A tip, you can keep make the bruschetta ahead of time, making enough for several sandwiches, and store it in the fridge for a couple days.
