I got the idea for this recipe in out local news paper, "The Hartford Courant". It makes a very tasty sandwich filling, especially good on a Zone roll. Cucumber Egg Salad Mix together the following ingredients: The whites of 2 hard cooked eggs, choppped 1/3 cup chopped seeded cucumber Sliced green onions to taste (a tablespoon or two) 3 or 4 fresh basil leaves, chopped A small amount of your favorite Zone friendly mayo (the liquid in the cucumbers acts as an extender for the mayo) S & P to taste
