Tomato and Watermelon Salad

    Here's my take on a salad the was served at a BBQ I attended last weekend. It's very easy and it's especially refreshing on a hot summer day.



    Tomato and Watermelon salad


    Ingredients:

    Gourmet medley tomatoes (small sized tomatoes in a variety of colors), cut into quarters

    Seedless watermelon, cut into small chunks

    Sea salt


    Directions:

    1. Toss the tomatoes with the watermelon.

    2. Sprinkle with the sea salt.

    since no amounts were listed in the recipe, I have a question...

    Since watermelon is an unfavorable carb in the Zone, would you recommend a 3:1 ratio of tomatoes to watermelon?

    I use about half and half, a little more tomato than watermelon.

    So, the serving size must not be very huge? Just verifying this, so that other Zoners are aware that no more than 25% of the total carb in a meal or snack should be coming from unfavorable carbs.

    "Huge" is in the eye if the beholder I guess. 3/4 cup watermelon is one carbohydrate block.

    Everyone,

    I think Sue's recipe sounds delicious! Just be mindful of the fact that watermelon is an unfavorable carb, so when you utilize this recipe, you will need to adjust your meal plan so that no more than 25% of the total carbs of your meal or snack comes from unfavorable carbs.

    Or fresh picked mint, or Cilantro, too.
    And watermelon has some good nutrients, and is very high in water content, so as part of a salad really helps with making you feel a bit filled.

    John, we had this with dinner tonight. Eli and Jamie are here, and Eli correctly identified it as being "carmohydrate" (no, that's not a typo, for everyone reading, Eli is 3 years old). I keep reminding him it's carbohydrate with a but that's become a lost cause. And, to hear him say "carmohydrate", well, it's just too cute. Since I told him about protein and carbohydrates a few days ago at lunch he's been hilarious, labeling his food as proteins and carmohydrates at each meal. He must take after me, LOL!
