Kale chips

    Okay, maybe I am late to the party and most Zoners here know about this wonderfully nice delicious treat.
    And then again, maybe not.
    .
    I was watching a You Tube presentation by Dr. Terry Wahls - who beat the "incurable" disease of MS.
    (My wife's sister has MS, so its of vital interest to us.)
    Dr. Wahls went in to level 2 progression of the disease, a severe 2nd stage.
    Anyway, her eating plan appears to be similar to, but a very strict Carb version of the Zone.
    No dairy, no starchy carbs at all, and lots of super vegetables that support the Mitochrondia.
    (Her You Tube video is titled: "Minding Your Mitochrondia".)

    Some of the vegetables that she heavily used to combat her MS are:
    1.) Cruciferous vegetables: (Cabbage, Broccoli, Cauliflower, Kale, Turnips, etc.)
    2.) Sulfurous vegetables: (Onions, Leaks, Garlic, Mushrooms, etc.
    .
    I have never really liked Cruciferous vegetables, at all.
    But through recipes, have found several that completely eliminate the taste for me with Cauliflower.
    And my wife makes a decent non-mayonaise slaw with either shredded cabbage or shredded brocolli, or combo.
    And I can tolerate a perfectly steamed Broccoli with a little (healthy) dressing.
    (Turnips & Brussel sprouts, I get sick just thinking about them, so Never (?) again .... )
    .
    But I saw how potent that Kale is and since it appears closer to Spinach and Swiss Chard, I thought I'd try it.
    I heard about, searched for, and found a recipe (several - all similar) "Kale Chips".
    Oh my gosh, delicious and so simple!
    .
    Cut the leaves off of a bunch/bunches of Kale.
    I purchased 2 lbs; but started this first batch with 1 lb.
    (Save stems for juicing/smoothie!)
    Tear the Kale into about 2 to 3 inch pieces.
    Rinse liberally, drain, and pat dry.
    Sprinkle about 1 TBL of EVOO per lb. of Kale.
    Mix until all leaves are coated.
    Sprinkle by taste with Himalayan Crystal Salt or Sea Salt
    Mix thoroughly.
    Sprinkle spices of your choice, and mix thoroughly.
    (I used a bit of Italian Seasoning for this my first batch.)
    I saw one version where 2 TBL of Nutritional Yeast was used as well - that
    supposedly adds a "Cheese" flavor and gives it more of a "Pizza" taste.
    .
    Lay the Kale pieces out on a cookie sheet.
    1 lb for me covered two 11" x 17" cookie sheets.
    (I could have put more on each sheet.)
    Bake in a pre-heated 350 deg F oven for about 8 to 10 minutes - until crisp.
    .
    Enjoy a really great "Kale Chips" treat.
    Oh my gosh, though I sprinkled just a bit too much salt this first batch, they were amazing.
    .
    1/3 lb, about 5.5 oz, about 1/3 batch, pre-baked is equal to 1 very healthy and satisfying favorable Carb block.
    1 tsp of EVOO, about 1/3 of batch = 6g of Fat (2 blocks).

    Yes, I do the same thing. Also, spring greens or other dark green shredded cabbage is OK to use for it. But make sure you do not over bake it - they get bitter

    Finally got around to making these! Used the EVO and some Mrs. Dash (tomato basil garlic) and a little salt. Very tasty!
