Cut stem off and into florets, one head of cauliflower. Steam Cauliflower florets for about 7 to 8 minutes. Place steamed Cauliflower florets in blender. Add 2 Tbl (1/8 cup) organic milk (or Almond milk if Lactose intolerant). Add 1 Tbl pastured (organic, hormone free) butter. [Optional or substitute EEVO] Add 1/2 tsp pure Sea or Himalayan Crystal salt. Add 1/4 tsp pepper. Puree (My blender has 5 settings, #4 is puree - does one really need any more than that?) Serve. . Tastes like mashed potatoes with no Cauliflower smell/taste. Our daughter is Lactose intolerant, so when she is home, we use Almond Milk. . Per Serving: FAT: 6.7g Carbs - fiber = Net Carbs: 15.9g - 7.3g = 8.6g Carbs Protein: 6.3g |

Yum! I think I may have added some cottage cheese and/or cheddar cheese last time I made them. And, I have also done them using a bag of frozen cauliflower, they are a little more moist, though. |

Why haven't I tried these before now! I feel like I'm eating mashed potatoes! I love potatoes but don't eat them very often and when I do I have a tiny little portion. This is the best!! |

I make a similar cauliflower mash and add diced turkey bacon, shredded low fat cheddar and chives. It tastes like a loaded baked potato Sometimes we also add a dollop of light sour cream or plain yogurt on top. |
