    DIRTY "RICE"

    2 teaspoons olive oil
    4 cloves garlic, minced
    1 cup white onion, diced
    2 celery stalks, chopped
    1 cup green pepper, diced
    1 cup red pepper, diced
    3 cups cauliflower, riced with your food processor or box grated
    1 teaspoon fresh thyme
    1 bay leaf
    ½ teaspoon celtic sea salt
    ½ teaspoon pepper
    ¼ teaspoon chili powder
    ½ teaspoon cumin
    chicken or vegetable stock

    Heat olive oil over medium heat in a large skillet
    Add garlic, onion, celery, and peppers; saute until soft
    Stir in riced cauliflower, adding thyme, bay leaf, salt, pepper, chili and cumin
    Mix in small amount of stock (few tbsp at a time) just to blend the flavors together.

    Makes 2 servings of 2 blocks carb and 3 blocks fat. Add your choice of protein and a block of fruit for dessert to round it off.

    Yum! Just finished eating some CC Dirty Rice! Made it for the first time tonight. My whole family loved it!

    I loved this recipe, but admittedly have not gotten around to making it again. Thanks for bringing it back up to the top of the list--I think I may just make some tonight!

    I WILL HAVE TO TRY IT.
    This was posted long before my new found use of Cauliflower.
    Which I had avoided like the plague.
    (As with kale.)
    But these cruciferous vegetables are so good for you,
    and I have found ways to enjoy them without their awful taste.

    getting late, but I just got home after stopping at the grocery store to pick up a head of cauliflower. Had to rice it by hand (one of those hand-crank dicer/slicer thingies), But, the rest of it goes pretty fast, so should be eating in 1/2 hour.

    Made this for us. Came out well. It was a hit, my wife really liked it.
    Actually one head of cauliflower made about 5 cups riced, just shy of two full batches.
    So I split it in half, and added 1/2 cup of shredded cabbage mix to each batch.
    Cooked one up and put the other batch in the refrigerator.
    Had it a couple nights later.

    Thanks, John! My hobby liked it very much! I think I would make it more often if I had the right equipment to rice the cauliflower.

    We had thought about purchasing a large Food Processor, for Christmas,
    even purchased one, $99 for normally $199 from Cusinart at MACY's.
    Then I returned it, when I remembered our old, reliable, (Kitchen Aide like) Kenwood mixer,
    much cheaper than Kitchen Aide at the time, 25 years ago, came with a Food Processor attachment.
    So, I use it to rice the cauliflower.

    I found nearly same recipe a few days ago, but roasted, which is more healthier I think.
