THAI TOFU WITH MANGO SALSA Ingredients: Firm or extra firm tofu, cut into slabs Thai seasoning spice blend Light olive oil suitable for cooking (refined, not extra virgin) A purchased freshly made mango salsa Black beans Fresh mixed baby salad greens Directions 1. Sprinkle slabs of tofu with a Thai seasoning spice blend and then brown in oil in a non-stick pan on the stove top. 2. Serve on a bed of baby greens, topped with a purchased freshly made mango salsa (the one pictured is from Whole Foods Market), and some black beans.
