COWBOY CAVIAR (Based on a recipe from Eurofresh Farms found in the book IN THE KITCHEN THE COSTCO WAY) Ingredients: Salad: ½ cup corn 1 can (1 ½ cups) black eyed peas(or 3/4 cup black eyed peas and 3/4 cup dark red kidney beans), drained and rinsed 2-3 green onions (scallions), chopped 6 medium to larger plum tomatoes, chopped 1 medium avocado, chopped 2/3 cup of chopped fresh parsley (or fresh cilantro) 1 green pepper, seeded and chopped 1/2 cup chopped celery Dressing: 3 Tablespoons olive oil 1/4 cup wine red vinegar 2 cloves garlic, crushed and minced 3/4 tsp sea salt 1/8 tsp ground pepper 2 Tablespoons cumin Directions: In a medium bowl, combine the corn, beans, green onions, tomatoes, avocado, parsley, green pepper, and celery. In a small bowl, whisk together the dressing ingredients. Add to the vegetable mixture and toss to coat. Makes 10 servings, each serving containing about 1C and 4F |
