Hello Zoners - Happy Labor Day to all. I am looking for a Zone approved/friendly pizza crust. Anyone have a recipe that they can share? I think Sue had a picture of her Zone Pizza and Zone crust on facebook that looked delicious- but I can not find the recipe. Have a hankering for Pizza - and trying to stay in the Zone. Thanks in advance for sharing. Kim |

Hi Kim, the crust in my photo is a Zone bakery product, which is unavailable at this time. |

There are some that were posted which don't require any grains/flour. Just do a search on this site. I tried one using eggplant, was very good but did take some work. |

I posted both the eggplant pizza crust and the cauliflower pizza crust recipes. The Cauliflower recipe is my wife;s favorite. We just had it again last night. I often double the recipe using 1 whole head of florets, as depicted, below. From MEMORY: In a food processor, rice raw cauliflower florets. 1/2 head makes about 4 fluffed cups. Cook in microwave about 15 minutes 20 minutes if doing a whole head. Set aside to cool (refrigerator, okay.) 2 cups cooked = ~ 1/2 head, 4 cups cooked = ~ 1 head. Set egg(s) to room temp (or place in warm water for 5-10 minutes). . Preheat oven to 450 deg F. Add 1 cup cheese per 1/2 head, 2 cups cheese per whole head cooked cauliflower. Add 2 egg whites ( 1 Egg) per 1/2 head or 4 egg whites (2 eggs) per whole head. Add spices as desired. Mix well. Roll out evenly, a very soft, wet dough, don't worry. 1 whole head rolls out nicely to 14 in diameter. Bake on greased Parchment paper for 15 minutes 1/2 head or 20 minutes full head. Remove from oven, and let cool a bit. Add pizza sauce, cheese, and or whatever other toppings as desired. Place under broiler until cheese melted and/or toppings heated. . I the recipe thread where I originally posted this, i had worked out the Zone blocks.

For spices, it varies! But always 1 Tbl (2 Tbl) Italian seasoning. About 1/4 tsp ground cloves (helps overcome/neutralize) the Cauliflower taste A couple shakes salt (Himalayan Crystal) A few twists ground black pepper. And a couple of shakes of hot red pepper.

Years ago I was in Overeaters Anonymous and a friend of mine was following a weighed and measured food plan which is rather similar to The Zone. She was allowed 4 oz protein, 1T fat, and 8 oz cooked and 8oz raw vegetable per meal. No grains or starch at that point in the plan. I followed the plan for a while too. My friend came up with a great substitute for pizza which did a lot to satisfy me. Perhaps it could be modified by someone to work for the zone? She sliced eggplant (about 1/2 inch thick) and used that as the base. She took some canned crushed tomatoes and cooked it down and added some garlic and basil. She then topped the eggplant slices with some of the crushed tomatoes, topped it with cheese and some cooked mushrooms and baked them in the oven. I don't recall how long (and I can't ask her since she's not with us anymore) but it had to be long enough to cook the eggplant. These things were really good and they really helped our pizza cravings. She also did something similar for spaghetti using spaghetti squash which she sauteed on a pan in some butter and then topped with the same sauce as above and some cheese. |

Those are both really great ideas, and I must say that this is the ONLY way that I get my kids to eat eggplant! LOL |

hmm, if your kids actually eat eggplants that way, the crust must've been good. do you have a specific way of preparing the eggplant as crust? or just brush with oo and so forth as per the other person? a |

Just sliced the eggplant and added the toppings, roasted in oven for awhile (don't remember how long specifically) |
