I had a spinach, black bean, ham and Gouda Frittata, 1 red pepper and broccoli/cauliflower mix. Frittata (makes 8 3-block servings with 3P, 3F and 1C): 2 pints of egg beaters (8P) 12 oz smoked Ham Lunchmeat, diced (12P) 5 oz Gouda, shredded (5P) (8P + 12P + 5P = 25P) 10 cups cooked spinach (1C) 1 cup rinsed back beans (7C) 3 cloves garlic, minced (0C) 2 tsp French Thyme (0C) 1 TBSP dried minced onion (0C) 2 tsp garlic powder (0C) 1 tsp sweet paprika (0C) (1C + 7C = 8C) 8 tsp Olive Oil (24F) Oil a rectangular 11x7 baking dish with 2 tsp of olive oil. In a large saute pan, heat remaining oil. Add 3 cloves of garlic and saute until the garlic starts to "melt". Add all spinach and saute to cover all spinach with oil until leaves just start to wilt a bit. Add spinach, garlic and oil to bottom of baking dish and spread evenly. Add 1 can of well-rinsed black beans spread evenly. Pour in 2 pints of egg beaters to fully cover the spinach and beans. Add diced ham evenly to the mix. Sprinkle dried onion and garlic powder into egg mix. Top with shredded Gouda - try not to let the Gouda sink so that it can brown nicely in the oven. Finally, top with Thyme and Paprika. Bake at 325 for 45 minutes or until done to firm in the center. Serves 8 (3P, 1C, 3F). I serve mine with 2 additional block of Zone carbs. Today I had 1 red pepper (0.5 C) and 1.5 cups of cooked broccoli/caulifower mix (1C). Note: I usually run slightly carb light due to carb sensitivity. |

I had a Zone cinnamon bun, toasted and spread with a little almond butter. I still have a few left in my freezer! :) |

I have some cinnamon bread and some plain bread in the freezer still. Three bags of pasta saved for a special occasion. I'm thinking anniversary dinner! After that, I'm out. |

I've got a few more Zone foods in the freezer, too, mostly bagels. And, like you, I'm saving a bunch of fusilli that has a December 2012 expiration date. Lunch for me today was a seafood stew containing lots of veggies, olive oil, calamari, bay scallops and shrimp. |

I am hopeful that when the new foods come out, that there are options that are wheat free! Perhaps somewhat like what Cedarlane used to have. |
