Flank Steak Fajitas - can someone check this recipe?

    Hi, all! I'm now working on converting some of our favorite recipes to make them zone friendly. This is something that would be for occassional eating since there are a couple of less desirable carbs but I'm hoping you all can check it and see if it's balanced. Thanks! 3 oz Flank steak - thinly sliced 1 tsp grated ginger 1 medium garlic clove 1/2 tsp lime juice 1/4 tsp salt 1/8 tsp pepper 1/3 tsp honey 1 tsp olive oil 1 1/2 c onion 2 c portabello mushrooms 1/2 c red bell peppers 1/2 c jalapeno or anaheim peppers 1 6 inch corn tortilla Combine ginger, garlic, lime juice, salt, pepper, honey and 1/3 tsp olive oil in a small dish. Add flank steak and marinate for 30 minutes. Meanwhile slice vegetables into a rough chop. Heat 2/3 tsp oil in iron skillet or non-stick pan. Cook meat in oil until cooked through. Remove to a plate to keep warm. Cook vegetables in same pan you cooked meat in (it allows the veggies to pick up some of the leftover marinade). Cook veggies until tender but not too soft. Return meat to skillet with veggies and toss to combine. Serve with the corn tortilla. You will have a lot more filling than tortilla, but I just eat that with a fork.

    I think it looks good.  The nice thing about fahitas is that you don't really HAVE to eat them with a tortilla. 

    The balance will depend on the amount of carb in the tortilla, and there may be some differences from one brand to the next. 

    I wouldn't worry about the honey, it contributes about 2 grams of carb. 

    Looks like about 2 blocks of veggies.

    Overall, I think it is decent recipe, with maybe just 1/3 of the carbs coming from unfavorable.  Just slightly over zone recommendations (i.e. no more than 25%), but really not a bad way to enjoy if this is one of your favorite things. 

    And, you could easily eat this without the tortilla, increasing the veggies a bit and then maybe crunching up a few corn chips and sprinkling on top.

    OR start purchasing the low-net carbs (6 grams net Carbs) whole wheat tortilla's, and reduce your ubfav carbs to less than 25%.

    Christie, another alternative is to use Zone flatbread instead of a tortilla.  Then you can use less of the filling, more like a real fajita, and have enough filling leftover to freeze in single serving sizes.  I've used both Zone flatbread and Zone pizza crust in place of tortillas.  They warm up very nicely in a pan on top of the stove, and quickly too, much like a flour tortilla does.  When I use a pizza crust, I cut it in half across the diameter, and slice across the middle it to make two thin layers.  I've also done this to make pocket sandwiches by slicing only into the middle on the cut edge and leaving the curved edges attached to each other (hope I'm not confusing you!).

    Thanks, everyone! I can actually do without the tortilla for myself but kids and hubby would not agree. Cranberrycat - thanks for the info on the honey, too. I was worried about it but even that little amount makes a difference in taste so I hated to leave it out. For myself I'll just increase the good carbs and eat it without the tortilla, but I can still help my family eat in the zone by making it so they can have the tortilla if thy want. Thanks! John - good idea on the wheat tortillas. I prefer wheat in most things although I've been trying to avoid grains with my MS. I can use the wheat tortillas for my family and just use the protein and more good carbs for myself. Sue - not confused, but grateful! I like trying different things so I appreciate all the great ideas. I'm not having too much trouble converting some of my recipes for the proteins and carbs, but it's the seasonings that have me a little more unsure. Thanks for all the great ideas and input. I appreciate it!

    Sounds like a good compromise for the family, as they can enjoy the fahitas just the way they like.  If you are trying to cut out grains, then this is a good  meal that should work for everyone.
