I found a StonyField Farms (yogurt) orzo chicken salad recipe today that could easily be adjusted to make a delicious Zone 1-2-3 meal using Zone Orzo.. I haven't tried it yet, but I might make it for dinner tonight. Here it is.

Orzo Chicken Salad
A medley of rich Mediterranean flavors, this cool salad is as nutritious as it is delicious. makes: 6 servings
Ingredients3/4 cup orzo 2 tablespoons olive oil 2 tablespoon chopped fresh tarragon 4 tablespoons fresh lemon juice (juice of 2 lemons) 1/2 tablespoon Dijon mustard 1 cup Stonyfield Organic Fat Free Plain Yogurt 3 cups cubed cooked chicken 1 cup halved cherry tomatoes 1- 6oz jar marinated artichoke hearts, drained 1/2 cup coarsely chopped Kalamata olives 1 1/2 tablespoons capers, drained
DirectionsCook orzo according to package directions and let cool. In a small mixing bowl, combine olive oil, fresh tarragon, lemon juice, Dijon and yogurt. Refrigerate for 1 hour for flavors to combine. In a large bowl, combine chicken, orzo, cherry tomatoes, artichoke hearts, kalamata olives and capers. Toss with yogurt dressing. Chill and serve. _________________________________________

Before in April at 245 
Now at 208 and looking 10 years younger  I love the Zone! |

I would say that since that recipe is not from the ZONE website and that it has chicken (Protein), that it is not ZONE 1-2-3 ORZO. However, with an organic whole wheat Orzo, it would be normal, real food zoned. |

You won't be able to fit it to the Zone very well if you don't, unless you were only going to use one small spoonful of traditional orzo per serving. Note I said it could be easily adjusted. To do that, you'd change it to Zone orzo and change proprotions of the ingredients to suit your 1-2-3 meal balance or your classic Zone meal balance, whichever method you use to make your Zone meals. how many blocks does this recipe produce? It seems like a pretty large amount to batch up. |

Steven; . I have not had time (yet); however, you can go to http://nutritiondata.self.com/ and using Analyze recipe, enter the recipe and get the results. I often do that for interesting recipes. It gives me an idea of how to tweak quantities for Zone balancing. |

Using the recipe as a guideline, you can make it into 1 meal or as many as you like. You'd substitute Zone orzo, and all the rest of ingredients are excellent "grocery additions" for your 1-2-3 meals. They also excellent ingredients for classic Zone meals. You'd use the amounts that suit your personal Zone balance needs. |

I have been using oat groats as a decent substitution for traditional orzo. At least it turns the "orzo" portion into a favorable carb. Then, one can apply the traditional coversions to adjust the recipe into block proportions. I use the same website as John, to help with conversions. Also gives a pretty good idea on the glycemic load, which will help to guesstimate how well-zoned it is. |
