I've noticed that nobody answered your post so though I might help.

Is this meant to be full 3 block meal, or just one snack or part of a bigger meal? I am not sure how many blocks of protein is 1 cup of tofu, but it might be 3 blocks.

Replace veg oil with olive oil - amount of olive oil will depend on fat content in tofu but I would say no more that 1 tea spoon. Also, not sure how many block 1 cup of tofu renders. It may contribute to the carbs as well.
    Use water, not stock.
1 head of celery + 1 onion is at most 1 carb block.

Mashing it all, I think, makes it less favourble. The soup itself may not be a balanced meal on its own, but it can be a part of a balanced meal if you eat some missing blocks as a side dish.

I though I post my soup: variation on Caldo Verde, Portugese cabbage soup.
    This is 3 block meal.

250 g of shredded cabbage or spring greens - wash a set aside.

In a pan, sweat 1 chopped onion and 2 cloves of garlic on 1 teaspoon of olive oil. When they are translucent, pour 3 cups of water into it, add bay leaf and all spice (3 whole berries) nd salt and pepper. Let it cook for 5 minutes. Then throw into it slightly less that 1/2 cup of beans (either garbanzo or some other white variety), let it cook until the beans are soft enough to mash. Fish the bay leaf out of your pan and using hand blender, mash it all. Add the bay leaf back to your soup. Throw cabbage into it. Let it cook for 10 minutes or so, until the cabbage is all soft. Traditionally chorizo sausage is added to the soup, but I add a cooked chicken pieces (3 blocks) or sometimes 2 blocks of chicken and 1 slice of chopped chorizo, heat it all. Serve
