I though I post my soup: variation on Caldo Verde, Portugese cabbage soup. This is 3 block meal.
250 g of shredded cabbage or spring greens - wash a set aside.
In a pan, sweat 1 chopped onion and 2 cloves of garlic on 1 teaspoon of olive oil. When they are translucent, pour 3 cups of water into it, add bay leaf and all spice (3 whole berries) nd salt and pepper. Let it cook for 5 minutes. Then throw into it slightly less that 1/2 cup of beans (either garbanzo or some other white variety), let it cook until the beans are soft enough to mash. Fish the bay leaf out of your pan and using hand blender, mash it all. Add the bay leaf back to your soup. Throw cabbage into it. Let it cook for 10 minutes or so, until the cabbage is all soft. Traditionally chorizo sausage is added to the soup, but I add a cooked chicken pieces (3 blocks) or sometimes 2 blocks of chicken and 1 slice of chopped chorizo, heat it all. Serve |
