    Healthy (Holiday?) Cole Slaw:
    Coleslaw Tart and Sweet:
    .
    Sweet & Tart Slaw
    20 minutes
    .
    5 cups (1 head?) organic red cabbage, sliced
    1 / 2 cup Dried Cranberries, Organic
    1 / 3 tablespoons rice vinegar, (1/3 cup + 2 tablespoons)
    1 / 3 cup Sweetener of your choice
    2 teaspoons Organic Extra Virgin Olive Oil, Cold-Pressed
    3 / 4 teaspoon Himalayan Crystal Salt
    1 / 2 teaspoon Organic Black Pepper
    1 / 4 cups green apples, sliced
    1 / 4 cup Organic Raw, Halved Pecans, No Salt, chopped and roasted
    .
    Combine cabbage and cranberries in a large bowl.
    Combine rice vinegar, sweetener, olive oil, salt and pepper in a separate bow, stirring with a whisk.
    Drizzle dressing mixture over cabbage mixture, tossing gently to coat.
    Cover and chill 2 hours.
    Before serving, add apple and toss well to combine.
    Sprinkle with pecans.

    Makes 16 servings. Serving size 0.5 cup.
