Beef Barley Soup

    Beef Barley Soup

    Makes 4 3-block servings

    12 oz boneless beef chuck
    6 cups water
    2 cups sliced celery
    2 cups sliced mushrooms
    1 cup chopped tomato
    1 tsp salt
    1 tsp dried rosemary, crushed
    1/2 tsp pepper
    1 clove garlic, minced
    1 6-oz can tomato paste
    1/2 cup quick-cooking barley

    Cut meat into 1/2 inch cubes. In a Dutch oven, combine all ingredients except tomato paste and barley. Bring to boil; reduce heat. Cover and simmer 1-2 hours or until the meat is tender. If necessary, skim fat.
    Sitr in tomato paste and barley. Return to boiling; reduce heat and simmer 10 minutes until barley is done. Serving size is 2 cups.

    I can't wait to try this recipe of yours and thank you very much for sharing it. I love soup, especially during cold weather. In the winter, about every other meal I make centers around soup. I tend to favor thick, chunky, meal-in-a-bowl soups, primarily because I’m too lazy to make lots of different courses. But if I had all the time and energy in the world, I would like nothing better than to start every meal with a light, vegetable-based soup and a <a title="What are Short term loans" href="https://personalmoneynetwork.com/short-term-loans/">short term loan</a> is a big help to pay out my vegetable soup.

    Hi Cran, I made a modified version of your Beef Barley Soup the other day and it came out great! I substituted ground beef ( grass fed of course) and added some chili power and cilantro. I made a double batch and the leftovers were even better the next day :-)

    Great idea, I see that my original recipe used beef chuck, but I usually use the lowest fat ground beef that I can find.
    (wrote that recipe back in 2004, I think). It would also be good using cubed beef pieces, rather than ground beef. Or, substitute other proteins. The vegetarians can easily sub in extra-firm tofu!

    can I use some thing other then 6-oz can tomato paste .......
    Get back please ........new to all this......

    Sure, you can tweak and adjust things as you like! Add seasonings that you enjoy. If you eliminate the tomato paste, be sure to replace it with a different carb.
