I can't wait to try this recipe of yours and thank you very much for sharing it. I love soup, especially during cold weather. In the winter, about every other meal I make centers around soup. I tend to favor thick, chunky, meal-in-a-bowl soups, primarily because I’m too lazy to make lots of different courses. But if I had all the time and energy in the world, I would like nothing better than to start every meal with a light, vegetable-based soup and a short term loan is a big help to pay out my vegetable soup. Thanks and best regards, Alma |

I might try it with Quinoa, instead. |

Hi Cran, I made a modified version of your Beef Barley Soup the other day and it came out great! I substituted ground beef ( grass fed of course) and added some chili power and cilantro. I made a double batch and the leftovers were even better the next day :-) Thanks for sharing. Paula

Great idea, I see that my original recipe used beef chuck, but I usually use the lowest fat ground beef that I can find. (wrote that recipe back in 2004, I think). It would also be good using cubed beef pieces, rather than ground beef. Or, substitute other proteins. The vegetarians can easily sub in extra-firm tofu! |

Sure, you can tweak and adjust things as you like! Add seasonings that you enjoy. If you eliminate the tomato paste, be sure to replace it with a different carb. |
