    I have been less than impressed with most grainless, yet healthy bread recipes.
    Here's one I tried while allso doing our grainless pancake recipe, this morning before church.
    It cam out really, really well.
    I thank CranCat for pointing me to Elans's Kitchen, from which i obtained this recipe.
    It came out well, and I have a new website for trying grainless and healthy recipes.
    (Grainless or Gluten-Free does not necessarily mean healthy.)
    We are very tolerant of gluten; but, we have chosen the healthier lifestyle of adding grain-free as much as possible to our Zone lifestyle.

    Ingredients
    .
    1.5 cups blanched almond flour (NOT meal)
    2 Tbl coconut flour
    1/4 cup Flax meal or flour
    1/4 tsp sea salt (or Himalayan crystal salt)
    1.5 tsp baking soda
    5 eggs or 10 egg whites
    1/4 cup coconut oil
    1 Tbl honey
    1 Tbl apple cider vinegar

    Directions
    .
    Blend well all dry ingredients (food processor on low recommended).
    Gently beat eggs, then pulse in (or mix well) all liquid ingredients.
    Pour into one greased 3.5 in by 7.5 in loaf pan
    or into two 3 in by 5.5 in loaf pans.
    Bake at 350 deg F for 30 min.
    Cool and serve.

    Serving Size: 24 slices (using the two loaf pans)

    Protein: 3.8g (1/2 block)
    Fat: 6.0g (2 blocks)
    Carbs: 9.6g
    Fiber: 5.5g
    Net Carbs: 4.1g (1/2 block)

    Thanks, John! I appreciate the compliment! And, will look forward to trying this recipe as soon as I can also add the coconut flour to my pantry.
