Disclaimer: I have not tried this recipe yet, nor have I done any calculations to see how it comes out regarding block breakdown. I was surfing a website and came across this gluten-free recipe for bread, and thought it would be interesting to post, especially in light of the recent posts about using almond flour and coconut flour in recipes. The website is http://www.elanaspantry.com/ (hopefully posting the link won't get my post deleted-lol, but I wanted to give credit where credit is due).

    Paleo Bread

1 ½ cups blanched almond flour
    2 tablespoons coconut flour
    ¼ cup flax meal
    ¼ teaspoon celtic sea salt
    1 ½ teaspoons baking soda
    5 eggs
    ¼ cup coconut oil
    1 tablespoon honey
    1 tablespoon apple cider vinegar

Place almond flour, coconut flour, flax, salt and baking soda in a food processor
    Pulse ingredients together
Pulse in eggs, oil, honey and vinegar
Pour batter into a greased 7.5 Inch x 3.5 Inch Magic Line Loaf Pan
Bake at 350° for 30 minutes
    Cool and serve

I don't know, because it is baked, but perhaps it is because it comes from whole ingredients? That is the title of the recipe as per the website.

As far as ingredient substitutions, I bet it would work out fine by using agave nectar in place of the honey, maybe use peanut oil instead of coconut oil. She states that the flax adds a nutty taste/texture to the bread, and did not specify any other reason for it. She says that she has done many substitutions with this recipe, and I am interested in reading up on that further!
