I was thinking about sugar free chocolate (but will use stevia) but was hesitant when found out that I had to add a ton of coconut oil which is like 2,000 calories/8oz. Any substitute ideas? Thanks. |

I use chocolate as a treat, and choose the highest % cacao that I can find. Sometimes I will mix unsweetened cocoa powder into milk as a treat, not even feeling the need to add any sweetener. I have never attempted to make my own chocolate. |

Agree with Cranberry cat. The best way ahead is probably to go "cold turkey" on chocolate, or learn to love unsweetened (bitter) chocolate. Alternatively stick with Stevia and the full fat coconut oil to try to make up for the flavour lost from removing real sugar. Coconut oil is very unique in its texture. It has a very high "freezing point" - I.e. a few degrees below normal indoors temperature it hardens. I don't think any other oil has these properties. If they do, they are probably as high calories as coconut oil. I've been off chocolate for almost 2 months now, only giving in to "real" chocolate once during this period. I had some "healthy" nut based snacks (sweetened with fruits etc). There is nothing to cure a sweet tooth like a health scare! Try acute arthiritis... I just need to think about what my feet looked like (red balloons!) and I am able to resist the temptation...

If you use raw virgin cocoa powder with either Olive Oil or Coconut Oil or combination thereof of your choosing. you can make fudge like (melted chocolate) with a 3 Tbl Cocoa Powder to 1 Tbl Oil. This can then be used in recipes calling for melted chocolate. You might want to add a tiny bit of liquid (water, milk, whatever is in the recipe, to get the consistency of melted commercial chocolate. Though it will not necessarily harden like commercial chocolate. But, then, it does not have any chemicals or unknown ingredients, either. Add just a touch (3 drops) of Stevia, and you remove the bitter, without making it too sweet or adding unfav carbs.
