Here's a tip from one of Dr Sears' videos on You Tube (you can search for ZoneAdmin on You Tube to find more interesting tips and info). Dr. Sears explains that vinegar lowers the glycmic response of a meal by slowing down the breakdown of carbohydrates. Basically, vinegar decreases the activity of enzymes in the stomach resulting in the carbohydrates getting into the blood stream more slowly. The more vinegar the more decrease in the glycemic load.

    Sue,
Thanks for posting this tip. I love vinegar, and it is quality stuff can drink it straight up. I will remember this tip when I've overdone it on an unfavorable carb!
Just returning to the Zone, now working over night shifts and finding lots of new challenges with eating over night 3-4 days then flipping to my family's schedule the other days of the week.

Joell, have you tried white balsamic? It adds a touch of flavor, but it's light at the same time. It doesn't overpower the taste of the food. Good luck and let us know how your schedule is working out.
