If I have a chicken breast that the package states has 3 grams of fat in 4 oz., and I require 3 oz for my protein block, how do I figure how much fat I need to add since there is already 3 grams in 4 oz, but I'm only having 3 oz.

It is OK to have a little additional Fat!
Technically you are getting 3/4g fat per oz of chicken.
OR 3/4g x 3oz = 2.25g fat. I would just count it as about 2g of Fat which is equivalent to 1 serving of protein or 1oz of the chicken. For the additional 2oz of chicken, just ensure you have an additional 7g of good mono- fat.
