Dr. Sears states that juicing has been a failure for health because it removes the fibre content (the "control rods" of carbohydrates) of fruits and vegetables (p. 17, The Zone). However, he also states that the only form of fibre that affects the rate at which sugar is absorbed into the blood is soluble fibre (p. 18, Mastering the Zone). Does juicing remove both the water-soluble and insoluble fibre? Am I missing another crucial detail, or am I on to something? Thanks, Michael N. |
