Years ago, we had this discussion, but I don't recall how we decided. So, thought I would bring it up again-LOL! My hubby had brought home 2 really big rutabagas, and I am trying to decide if they are favorable or not? Many "root" veggies are not favorable, but carrots are favorable and turnips are favorable, too. Parsnips are unfavorable. So, what about rutabaga? |

I looked it up on nutritiondata.com, and 1 cup raw has 7g net carbs, with a glycemic load of 4. Compared to turnips, as a 1 cup serving has a glycemic load of 3. Carrots also have a GL of 3, same serving size. Parsnips are closer to a GL of 4, but the serving size is much less. I just have to equalize these values to reflect "block" portions, and then maybe it will be more clear. |

I'd love to know the answer to this matter.....because I'd like to make a cubed cooked starchy veg into "country fried potatoes" to have with eggs. I love acorn squash done that way....but its unfavorable. Turnips might be ok....with onions....but they're kinda strong.....rutabag is strong, but sweet, and parsnips are divine. Any winter squash would work well... the other day I had one third of a sweet potato that way...yum. |

Janet, I remember doing all of that comparing, but I don't remember what I came up with. However, I did have the rutabaga in a meal, and I didn't stay in the zone with it. Sometimes, the numbers just don't matter all that much! |
