This is a take-off from an eggplant pizza recipe I saw on this site ... and because we grew eggplant in our garden for the first time this year.

Throw all this together in a saute pan:

2 oz. diced cooked chicken (2P)
1 tsp. olive oil (3F)
1-1/2 c. diced eggplant (1C)
1/2 c. tomato sauce (1C)
1 block other veggies, i.e. mushrooms, onion, red pepper (1C)
Basil, garlic and oregano to taste.

When cooked through, veggies are tender and all liquid has cooked down, add 1 oz. low-fat cheese (1P) and melt over top.

Enjoy!

I tried this with zucchini instead of the eggplant, and it was good too; although, not quite as good as the eggplant for me.

Sounds delicious!

You might not be aware, but when you use cooked chicken 2 oz would be about 3 blocks. Raw chicken would be one ounce to a block. Cooked chicken weighs because it loses moisture (water weight) as it cooks. Your meal contains 4 P.

Shari, you are my hero! I love eggplant and it saves the day for me when I feel like pizza or pasta. I don't miss those things at all as long as I can have my eggplant and sauce!

I love eggplant too. I'm going to be trying that recipe! There was another eggplant recipe on here (maybe still here) where you mixed all the ingreds in a plastic baggie and then cooked it fairly quickly in the stove top. It was very good.

We had eggplant for dinner tonight. I grilled Nature's Promise chicken sausage, sliced eggplant and some large portabello caps seasoned with Italian seasoning. When done I cut the grilled veggies into large chunks and tossed them with evoo and white wine vinegar. Dessert was fresh peaches.

I have done similar things with my eggplant. It is one of those throw-together meals that just happens, no special recipe, just gets put together and there you have it!

However, now that you have written it down, I can copy this and put it in my file!

Thanks Shari, you just gave me my dinner menu tonight. I bought an eggplant thinking I would find a way to cook it up. I hope I can eat it. My Mom would make breaded, deep fried eggplant when we were kids. It has set me against eggplant since. The only eggplant I have eaten is in Baba Ganouj, a dip I adore. Which may be zone friendly too???

2 med eggplant
juice from one good sized lemon
1/2 c tahini
3 cloves garlic
1/2 cup parsley
salt to taste
1/4 cupfinely minced scallions (optional)
1 tbl olive oil

The eggplants are roasted to wilting. mixed with everything but the olive oil, which is drizzled on top.

ALthough I have never seen tahini in the zone books??????

You're very welcome. I eat this a lot since we have eggplant growing in our garden. It's very yummy!
