I'm trying to get a pot of chili made and I'm using ground round which is 85% lean. To that I'm adding kidney beans and I'm wondering in the grand scheme of things do I count the protein in the beans towards the overall protein count or just the carbs?

Also, using the 85% ground beef, based on the nutritional analysis, if this is browned & drained can you assume that the fat content is actually far less than 15%?

I think that it is precooked but I am probably wrong. I found out today you only count protien from animals, soy and protien powders not from plant. It had me confused too.

Jason is correct...don't count the protein in the beans.
In Canada, 90% lean ground beef doesn't leave any fat behind to be drained. Could you try to find 90% lean where you are?

In the USA, there is a wide variety of "lean" ground beef available, depending on where you shop. I think I have seen up to 95% lean.

I have also wondered about cooking out the fat content. I wonder if the ground meat is boiled and then drained, would the fat cook out and drain out with the water, assuming that the water further permeates the beef and the heat liquifies the fat? If so, it would probably be a more efficient way of getting rid of the fat than just browning in the pan and then draining the fat off.

Sue, actually, I have done it, and it works out really well.

You would break it up into pieces, and then boil it. After boiled, drain it. Then, you can divide it up into individual servings and freeze it in ziplock bags (lay flat in the freezer).

When it is time to use it, you would just throw the frozen ground beef into your recipe. It works nicely for things like soup and chili. Or, you can season and saute in some OO with some veggies.

I've known people who boil hamburgers. Not something I'm interested in doing, personally! I do add water at times if I'm browning frozen ground beef, but as a general rule I don't like to.

I'm using 85% because that's what I have. I'm just wondering if what fat remains after being drained would be enough to throw the chili out of the 'zone'.

I'm glad to hear that the protein in beans need not be taken into consideration! What a MESS trying to get all that figured out!

CC, I actually think that's a good idea about freezing pre-cooked ground beef in single-serving sizes. When I got to work I could drop a portion in the crock pot & be ready to go!
