Hello. I've started to make my own kefir from a kit, and have been quite successful. The only thing is that I'm not sure if there is a time frame in which the batch should be eaten? We came home from hols and I had left my kefir in the fridge. It had been there two weeks and I didn't know if it would still be okay to eat. It smelled and looked the same.
I would appreciate any comments, thanks

If the batch smells fine you can eat t but beware, the more time the kefir ferments the milk, the more sour it tastes and the more astringent it becomes. In case of doubt discard it, you will loose some milk only.

Julie-

I realize this is kind of an old post. But I would love to know where you purchased your kefir making kit. I love kefir for fruit smoothies and don't really have trouble finding it at the market, but eventually DH and I will be retiring and living out in the sticks a bit and so having the skill and equipment for making my own kefir might be important. Would love to know more! Thanks
Beth

Hi Beth, Hope you still find this post. I have only just come across it!!
We are in Australia, don't know where you are from. But I found a powder kit at a health foods store. It had five packets in a box, each packet made up by mixing with milk, i used no fat milk. You let it sit out for a certain period, I think 8 or 12 hours, then refrigerate. Then say 1/4 or less of each batch could be mixed with another quantity of milk to make the next batch. The instructions say that this can be done up to 5 times per batch.
