During the summer my father would always invite my uncle to Cape Cod to make his favorite grilled mackerel recipe. Mackerel tastes so much better if you grill outside, but you can still saute inside and still be delicious. Add salt and pepper while fish is cooking. Beer or wine optional or fruit for dessert.
1 - 4 Block Meal
Ingredients:
6 ounces mackerel fillets
½ Tbsp. olive oil
1 Tbsp. lemon juice
1 clove minced garlice
1 Tbsp. fresh snipped parsley
½ Tbsp. dried oregano
1 Tbsp balsamic viegar
3 cups fresh green beans
1 cup cherry tomatoes
1 6 ounce dark beer..or small glass red wine
Instructions:
Spray non-stick sauté pan then cook mackerel until browned on both sides. Steam fresh beans in sauce pan until crisp tender with a pinch of salt. Add 1 tablespoon red wine vinegar and refrigerate. Remove mackerel and in same pan heat oil. Add garlic and sauté until lightly brown. Remove from heat then add lemon juice, vinegar, parsley and oregano. Pour sauce over mackerel and serve with chilled green beans and cherry tomatoes.
