Pork Marinara on the sly

I hated cauliflower as a young boy but my mother and grandmother managed to get my sister and I to love it when disguised in a marinara sauce..The original recipe would be served over a heaping dish of pasta but of course you can always substitue fresh fruit or a glass of wine at the end..Enjoy and don't forget to not burn the garlic!!!!

4 block meal

Ingredients:
4 ounces thinly sliced pork loin
½ Tbsp. olive oil
salt and pepper, to taste
1 cup kitchen ready tomatoes (nice red ripened)
½ clove garlic
2 cups steamed cauliflower (somewhat smashed with smaller flowerettes)
½ diced onion

Instructions:
Heat oil in skillet and add pork, salt, pepper..Lightly brown on both sides then add garlic and tomatoes..Let cook about 10 minutes then add smashed cauliflower and diced onions..Cook an additional 10 minutes

Serve w/ tossed salad and piece of fruit for a balanced meal.
