Miso Vegetable soup

I find this is a very filling lunch. I usually pre prepare the vegetables and put a small dollop of Miso paste in a bowl to take to work. Makes a tasty and filling lunch or dinner dish. Enjoy.

Ingredients:
1 desert spoon of white miso paste
2 cups of hot water
1 tsp. Toasted Sesame Oil
1 cup Cauliflower pieces
2 cups broccoli pieces
1 cup Green beans
1 cup Bean sprouts
¼ cup chickpeas (rinsed/drained)
Green leafy vegetable shredded (eg. Spinach, bok choy etc)
3oz cooked chicken or other cooked lean meat (I use a small piece of chicken breast)

Instructions:
In a soup bowl, add the hot water, sesame oil and miso paste and stir to dissolve the Miso. Add all the other ingredients except Bean sprouts and green leafy vegetables,to the Miso solution and place in the Microwave for a few minutes to cook the vegetables. Take out of the Microwave and add the beansprouts and shredded green leafy vegetables.
