Ingredients:
2 cups spinach
3/4 cup sliced cucumber
1 cup sliced mushrooms
3/4 cup chopped red pepper
1/4 cup chickpeas
1 ounce lowfat shredded cheddar cheese
1 hardboiled egg, chopped
3 slices turkey bacon, cooked and cut into bits
Dressing:
2/3 teaspoon olive oil
1 tablespoon ranch dressing
vinegar, to taste
Instructions:
Mix all ingredients together in salad bowl and enjoy! Add 1 block fruit for dessert.
