3 ounces cubed cooked chicken
1 ounce low-fat shredded cheese
1/2 cup black beans
1/2 cup salsa
12 black olives, chopped
Couple dashes of chili powder and/or cayenne pepper for a bit of boost
1/2 orange sliced
Combine all ingredients into a microwave-safe bowl and mix. (I make mine the night before so I can eat it at work the next day). Microwave until desired warmth and enjoy. Add some fresh chopped tomatoes, onions, parsley or cilantro for a bit of added freshness. Have orange for dessert.
