2 cups spring mix lettuce, washed, dried, and torn into large pieces
2 cups broccoli florets
½ red pepper, cored, seeded, and cut into thin strips
½ yellow pepper, cored, seeded, and cut into thin strips
2 medium tomatoes, sliced
1 tablespoon olive oil and vinegar dressing*
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
½ teaspoon freshly ground pepper, or to taste
3 ounces precooked grilled skinless chicken breast, sliced into strips
1 mixed fruit salad
Dollop of whipped cream, optional
Toss lettuce with broccoli, peppers and tomato. Combine dressing with the lemon juice Worcestershire sauce and pepper. Toss with vegetables and top with chicken. Serve fruit salad for dessert.
*Zone olive oil and vinegar dressing contains 1 teaspoon olive oil and 2 teaspoons vinegar. Extra vinegar may be added to taste.
