Picnic-style Cold Tempeh Salad

Ingredients:
8 ounces tempeh, cubed into ¼-inch pieces
2 tablespoons tamari sauce
3 tablespoons Nayonnaise (soy based sandwich spread)
½ cup plain yogurt
Juice of 1 lemon
1 tablespoon prepared mustard, or more to taste
6 medium celery stalks, chopped
2 medium green peppers, diced
6 hardboiled egg whites, chopped
2 slices of red onion, diced
6 black olives, diced
Parsley, diced

Instructions:
Preheat the oven to 350 degrees F. Toss tempeh with tamari sauce in baking dish and bake uncovered for 10 to 12 minutes. Mix Nayonnaise, yogurt, lemon juice, and mustard. Add celery, green pepper, egg whites and red onions. Fold in tempeh and sprinkle with olives and herbs.
