Chinese Seafood Salad

3 Block Meal

Ingredients:
1 1/2 ounces small cooked shrimp*
1 1/2 ounces cooked bay scallops
1 1/2 ounces canned salmon, flaked
1/2 cup plain low-fat yogurt
1/2 cup scallions, thinly sliced
6 cups lettuce, shredded
3/4 cup tomatoes, diced
1/2 cucumber, grated
1 cup red and green pepper strips
1 cup radishes, grated
1/3 cup snow peas, diced
4 teaspoons light mayonnaise
1/8 teaspoon cayenne pepper
1 tablespoon cilantro
1/8 teaspoon dill Lemon herb seasoning
Dash hot pepper sauce

Instructions:
In a medium bowl blend shrimp, scallops, salmon, scallions, light mayonnaise, dill, and hot pepper sauce. In second bowl mix together the yogurt, radishes, cucumber, cayenne, and cilantro. Combine yogurt dressing with lettuce, tomatoes, peppers, and snow peas. Top with seafood mixture, sprinkle with lemon herb seasoning, and serve.
