Exotic Salad

Ingredients:
1/2 cup of egg beaters or 4 egg whites, beaten
3/4 cup Chinese peapods, chopped in large pieces
3/4 cup of Vidalia onion chopped in large pieces
1/4 teaspoon fresh ginger, chopped very fine
1 ounce light Swiss cheese, chopped small
1 teaspoon Parmesan cheese
1 teaspoon extra virgin olive oil
Salt and pepper to taste
1 orange, sliced into 8 pieces

Instructions:
Fry onions, snow peas and ginger until onions are translucent. Lower heat and add eggs and cheeses. Stir quickly as egg beaters or egg whites take very little time to cook. Remove from heat and continue to stir until cheeses are melted. Add seasoning to taste. Serve hot with orange slices laid on their sides around 1/3 of the plate as decoration and dessert.
