Tuna Burgers

Ingredients:
6 oz. can tuna, drained
1/4 cup egg substitute
1 slice nonfat cheese
1/2 oz. bread crumbs*
1 hamburger bun*
1 apple, cored and cut in half
1 cup strawberries
1/2 cantaloupe
4 tsp. natural peanut butter
Italian seasoning to taste
Chili powder to taste
Paprika to taste

Instructions:
Set aside about 2 tsp. bread crumbs. Combine the rest of the bread crumbs with tuna, egg, & seasonings. Form into 2 patties. Coat patties with remaining bread crumbs. Cook in non-stick skillet until browned. Cut the halves of the hamburger bun in 1/2 lengthwise to make 4 slices of bread. Place patties in bread with 1/2 slice of cheese. Fill the core of each 1/2 apple with 2 tsp. peanut butter. Serve each with 1/2 cup strawberries and 1/4 cantaloupe.

* Editor's note: For a more Zone Friendly meal, substitute vegetables or more fruit for the hamburger bun. You can also use texturized vegetable protein (dried soy) available at health food stores to use as a breading source. Try to keep your unfavorable carbs to 1 block in a meal like this.
