Each serving of soup contains the following ingredients; simply multiply by number of servings desired.
1 cup plain non-fat yogurt
2 oz cooked, cubed skinless chicken breast
1 oz low-fat cheddar or jack cheese
1 diced tomato
6 sliced jalapenos (if desired)
1/4 cup canned refried beans
1/4 cup cooked rice (or more beans, if preferred)
4 tbs guacamole
2 tbs salsa
garlic, to taste
cumin, to taste
chili powder, to taste
salt, to taste
pepper, to taste
Simply mix contents into microwave-safe bowls for several minutes until hot, stir occasionally. Garnish with fresh cilantro and grated cheese. This also works great as a dip.
Editor's Note: The soup is a balanced four-blocker if you don't include the rice listed below. Try a sprinkling of rice perhaps. Also, you might want to substitute black beans for the refried beans. In our area Trader Joe's has refried black beans.
