Ingredients:
10 1/2 ounces shrimp
Red and green leaf lettuce, Boston lettuce and endive
1 cup jicama, diced
2 cups artichoke hearts
2 cups cherry tomatoes cut in halves
1 1/2 sliced cucumbers
1 tablespoon low-fat feta cheese crumbles
4 tablespoons avocado, diced
1 teaspoon olive oil
Balsamic vinegar to taste
Italian spices to taste
Pepper to taste
1 cup red grapes
Instructions:
Steam shrimp until pink or purchase pre-cooked frozen shrimp and defrost. Tear up the lettuce. Toss in olive oil and vinegar. Add Spices and ground pepper. Toss again. Place other ingredients on top of lettuce mixture, sprinkle with the feta cheese second to last and top with shrimp last. I use bleu cheese or Roquefort sometimes as well. Have grapes as dessert.
