Eggplan-tasia

My sister-in-law cooks many meals in the zone without really knowing it. When I told her about your program, she gave me this recipe she made up. I calculated the amounts to fit in the zone plan. This is especially good with fresh vegetables from the garden.

Two, four-block meals

Ingredients:
12 oz. (lean) ground sirloin
1 cup chopped onion
2 cloves garlic, brown and set aside
4 cups cubed eggplant
1 can diced tomatoes
3 tablespoons raisins
2 oz. red wine
Salt and pepper, to taste
1 tablespoon cinnamon

Instructions:
Saute in 2 2/3 t. olive oil. Add beef mixture and simmer till eggplant is softened and flavors have melded. Editor's note: This recipe sounds great. It would even be more Zoneful, if a teaspoon or two of the raisins were left out and fruit eaten for dessert. Try to keep unfavorable carbs to one-fourth or less of your meal.
