Lamb Meatloaf

2 - 3 Block Meals

Ingredients:
Meatloaf:
8 oz. lean ground lamb
¼ cup egg subsitute
½ tablespoon olive oil
1 clove garlic (chopped)
2 Tbsp. cooked bulgur
3 chopped mushrooms
spices (home made provencal mix- ½ Tbsp. rosemary, ½ Tbsp. oregano, 1 Tbsp. thyme, ½ Tbsp. marjoram, ½ Tbsp. sariette)

Tomato Sauce:
1 can italian tomato sauce
1 onion
2 cloves garlic
1 bunch fresh basil
½ Tsp. salt & ½ Tsp. pepper

Vegetables to balance
2 small bags frozen veggies, i.e., Green Giant etc. – your choice One large tossed salad, divided
2 small pieces of fruit for dessert

Instructions:
Meatloaf:
Blend all ingredients. Mold into small loaf. Cook at 350F for approximately 30 min. Serve hot with home made tomato sauce.

Tomato Sauce:
(Always buy canned Italian tomatoes - they are picked ripe from the vine). Chop 1 onion and 2 cloves of garlic and toss in pan with 1 teaspoon of olive oil. Add chopped basil and canned tomatoes. Let it bubble for 10minutes. Add salt & pepper is you like. Place tomato mix in blender and puree. Bring back to pan and let cook another 10 min.

If you want a clear sauce, press through a sieve otherwise simply serve as is. Large portions can be frozen in a container on in individual ice cube portions to add any other recipe. Enjoy!

Comments / Notes:
Making your own spice mix is easy. Simply mix spices you enjoy in a small container and add a little sea salt. It will keep for a few months and it's easy to add to any recipe. Home made tomato sauce is much better than store bought because you know what is in it. Organic tomatoes from Italy are best. Making larger portions of any sauce helps you plan for the week and it implies a healthy meal no matter how tired you are after work. Bon Appetit!
