Papered Fish

This recipe comes from Daniel Cortes Romo, a Mexican television star, who loves to cook. He shared these recipes during a presentation at the second Conference on Anti-Inflammatory Medicine in Cancun.

3 Block Meal

Ingredients:
4 ½ oz. fish
1 sweet pepper (red)
¾ cup onion, chopped
5 mushrooms, sliced
3 olives
2/3 teaspoon extra virgin olive oil
Nopal cactus to taste*
Mustard
Salt and pepper
Aluminum foil

Instructions:
Preheat oven to 425°. Cut a 12-inch piece of aluminum foil. Slice the vegetables and the olives and place them on the foil as a bed. Brush mustard on both sides of the fish, salt and pepper and then cover the fish with more vegetables and olive oil. Tightly fold foil and place in 425 degree oven for about 15 minutes or until fish flakes. Add two additional blocks of carbohydrates.

*Nopal cactus is very low-glycemic. It is practically a freebie carb. Here in the United States, you’ll probably find it in a can. If cactus isn't to your liking, try a few green beans.
