Concetta's Leftover Quickie

When visiting friends and family it's ok to stay put and not go out to eat. Especially nowadays when everyone is tight with the finances. Leftovers are just as good as any fancy restaurant. Just make it worthwhile by teaching others how to make a zone friendly dinner.

2 – 4 block meals

Ingredients:
8oz block of extra-firm tofu cut into cubed
1 cup thinly sliced Japanese eggplant
½ Tbsp olive oil
1 Tsp diced garlic
1 cup cooked steamed zucchini
1 cup fresh cherry tomatoes
4 ounces of cooked pork loin
1 cup Chickpeas (canned/rinsed/drained)
Sea salt + pepper to taste
1 apple per person for dessert

Instructions:
Place oil, tofu and eggplant in small pan and saute until golden brown. Add garlic and brown after a few minutes of cooking the eggplant. Take from refrigerator leftover zucchini, cherry tomatoes + pork then combine with cooked ingredients, add Chickpeas. Toss well together and serve luke warm. Apple for dessert.
