Baby Spinach Salad With Strawberries and Balsamic Vinegar Dressing

3 Carbohydrate Blocks

Ingredients:
6 ounces baby spinach (about 7 cups)
1 cup Mandarin oranges, rinsed and drained
6 strawberries, sliced
2 teaspoons extra virgin olive oil
1 medium shallot, minced (one heaping tablespoon)
1/4 teaspoon grated orange zest
1/4 teaspoon sea salt
1/8 teaspoon ground black pepper
1/8 teaspoon crystallized fructose
1 tablespoon fresh lemon juice
1 tablespoon champagne vinegar

Instructions:
Wash spinach and spin-dry. Place in a large bowl. Heat a small skillet over medium-low heat. Add olive oil, shallot, champagne vinegar, orange zest, salt, pepper and the fructose. Cook until shallot is translucent, 2-3 minutes. Whisk in lemon juice. Drain Mandarin oranges add to spinach bowl with sliced strawberries Drizzle warm dressing over salad mixture. Toss gently to wilt spinach.
