2 - 3 Block Meals
1 bunch flat or Italian parsley
2 cans fire-roasted, or Mexican style diced tomatoes
3 cans Chicken broth- 15 oz each
1/2 fennel bulb, chopped
3 carrots, chopped
1 parsnip, chopped
1/2 head green cabbage, chopped
1 bunch swiss chard, chopped
2 stalks celery, chopped
2 Jalapeno peppers, seeded and chopped
1/2 yellow onion, chopped
3 green onions, chopped.
8-12 cups of water.
Simmer for about one hour. Seasonings: 1 or more teaspoons of Chili Powder, 1 teaspoon of Coriander, and if you can afford it, several strands of saffron, salt and pepper to taste. This is excellent soup and surprisingly good for breakfast
**Note: To make this dish a complete zone meal add in your protein of choice, chicken, tofu, beef or even fish with each serving.
Chicken and beef about 3 to 4 oz.
Tofu and fish about 4.5 to 6oz.
