Zone Tilapia and Black Bean Confetti Relish

4 Block Meal

Ingredients:
6 ounce Tilapia fillet
3/4 cup canned black beans, drained
1/2 cup diced yellow bell pepper
1/2 cup diced red bell pepper
1 roma tomato, diced
1/3 cup chopped onions
1 1/3 teaspoons olive oil
1 tablespoon lemon juice
1/4 teaspoon ground cumin
1/4 teaspoon black pepper
1/8 teaspoon salt

Instructions:
Mix together the black beans, peppers, tomato, onions, oil and spices in an airtight container and marinate at least 30 minutes in the refrigerator. (Overnight will taste better.) Preheat oven to 350 degrees. Arrange fish in a baking dish and season to taste. Bake for 20 minutes or until the fish is flaky. Place the fish on a serving dish and arrange relish on top or on the side.
