Easy Barbecue Tempeh and Vegetables

4 Block Meal

Ingredients:
1 1/3 teaspoons olive oil
1 1/2 cups onion, diced
2 medium stalks celery, diced
1 clove garlic, pressed
2 red or green bell peppers, diced
4 ounces tempeh, cubed
1/3 cup textured vegetable protein (such as Morningstar Farms Burger Style Recipe Crumbles)
1/2 to 3/4 cup vegetable broth
1 teaspoon prepared mustard
1 teaspoon apple cider vinegar
2 tablespoons prepared barbecue sauce

Instructions:
1. Heat oil in large skillet and sauté onions and celery over medium-high heat until onions are translucent and slightly browned. 2. Add garlic, bell pepper, tempeh, and textured vegetable protein and sauté 3 to 5 minutes longer. If the mixture starts sticking to skillet, add 2 to 3 tablespoons vegetable broth. 3. Add vegetable broth, mustard, vinegar, and barbecue sauce. Simmer covered about 20 minutes, until tempeh is infused with flavor.
